    Quick & Easy Dinner Idea: Fish Fry!

    Hi this is Pranika! In summer we usually have a bit more time to cook dinner, especially on weekends.

    Frying fish is one of our favorite meals to cook together, since each member of the family has a job! It’s messy, delicious fun.

    Frying Fish for Dinner
    We served the fish with lemon wedges to brighten the flavor. On the side we had simple dish of boiled corn on the cob dressed with a drizzle of olive oil and sea salt.

    Fried Fish

    Fish Fry
    4 fresh tilapia fillets
    1 cup milk
    2 eggs, beaten
    1 ½ cup of flour
    1 tbsp sea salt
    1 tbsp black pepper
    1 tbsp garlic powder
    1 tbsp chili powder
    1 tbsp Cajun seasoning
    3 cups Canola oil
    Lemon wedges

    Set up a space covered by a sheet of aluminum foil. Makes for much easier clean up!

    Get a good pan for frying and pour the canola oil in. Heat to medium low at first until about 3-4 minutes before frying and then turn to medium. Place 3 bowls atop the foil and add milk to the first, 2 eggs to the second, and flour to the 3rd.

    Beat the eggs and add the Cajun seasoning to the egg mixture. Beat again. To the Flour, add salt, pepper, garlic powder, and chili powder and mix with a fork.

    Turn heat up to medium on the oil. Unwrap fresh tilapia and sprinkle each side with salt. Dip the fish into the milk and turn it over. Next move the fillet to the egg and make sure each side is coated. Finally, dip the fish into the flour and make sure it is coated fully and evenly on both sides. Finally move the fish carefully to the frying pan.

    Fry each side for about 2-3 minutes. We use a combination of a fish spatula and tongs when frying and turning the fish over to prevent breakage. Then when done, transfer the fish to a serving tray lined with paper towels. Also have extra foil to cover the fish while the other fillets are fried. You can squeeze fresh lemon on top right before eating if you like.

    I oversee the whole process and the side dish while my husband fries. My younger daughter mans the milk and egg and my older daughter does the flour. Every time we make this dish, the kids have a blast. They are excited for the messiness, their aprons, and the final product.
